I love receiving gifts like anyone else (I keep a mile long wish list on my notes app with literally everything I want) but so many times feeling special or valued as a mom goes a little beyond just receiving a gift.
To me there’s something to say about doing something thoughtful toward the person you want to honor that day.
As the main chef and doer of household things at our house, so much goes into cooking than just…cooking. There’s thinking of what recipe to make, what ingredients you already have, going and actually buying what you need, and then the actual cooking!
To me cooking for someone is a truly thoughtful act! If you do end up cooking for your mom or spouse this year, here are some recipes to help you out:
Brunch:
I am a huge fan of breakfast stratas! They come together the day before, and all you need to do is bake the morning of! They are hearty, delicious and my number one brunch item to make when I want to feed a crowd early in the morning. I have two strata’s in my easter recipe round-up, but this spinach and gruyere strata from Double Thyme is delicious, elevated, and perfect for mother’s day brunch.
Another delicious flavor combination is this croque monsieur bread pudding (aka strata) that will transport you to a breakfast in Paris. This is basically like a deconstructed delicious ham and cheese sandwich with eggs baked in. SO GOOD.
Pair any of these brunch dishes with a beautiful fruit salad, and you are set! Here’s a lovely fruit salad from Cooking Classy!
Dinner:
I can’t have a recipe round up, and not include Ina! If you read some of my other posts, you’ll see if that I always include one of her recipes – and this one is no different! If you haven’t tried her Parmesan Chicken (which is different than chicken parmesan, you need to add it to your list! Thinly pounded chicken, the breading is light, pan fried, and there’s a really nice lemon vinaigrette and salad that goes with it – this is a perfect spring dinner!
Cocktails:
This raspberry limoncello prosecco, from the Southern Thing hits all the Mother’s Day notes. It’s pink, refreshing, and simple! It’s definitely one of those low-effort, high reward recipes!
Dessert:
Banoffee Pie: This one is random, but I had banoffee pie once like 10 years ago, and I still think about it. While I don’t go making a whole bunch of dessert at home, if someone asked me what dessert I’d want on my day – I’d probably choose this one!
If you don’t want to embark on a whole pie making journey for mother’s day (I get it), these cookies are so simple, delicious, light, and addicting. I brought them to a cookie exchange last year and I enjoyed the flavor and texture so much! These gooey butter cookies from the Cookie Rookie, are essentially a gooey butter cake/St. Louis butter cake in cookie form!
Lastly, this is a recipe that I would make for my mom if she was in town with us this year. She loves vegetables like no one else and she loves mushrooms so much. I would make her this easy mushroom bourguignon, from the Easy Cheesy Vegetarian – grab the recipe here!
