
Spinach, Feta, and Avocado Quinoa Salad
Light, refreshing, and super nutritious—this spinach, feta, avocado quinoa salad is the ultimate go-to for a clean eating meal.
This spinach, feta, quinoa salad is my favorite salad to make for lunch when people come over. It is filled with vegetables, SO SIMPLE to assemble, and truly delicious to eat.
This salad is perfect for spring and summer, it has a fresh zing from the lemon and feta, and the avocado adds a creaminess to the dish that balances out the bright flavors of everything else.
There’s already so many vegetables in this- but you can always use this as a base and add chickpeas, olives, cucumbers, and chicken for more protein if you’d like!
But personally I love this as is. I have served this salad on many play dates before (for more tips on playdates look here) – and it’s the perfect vegetarian meal.
I personally love to eat this with ANY chip – pita chips go great here because it adds an really good crunch to the dish. This is a great salad to bring to potlucks, take on the go, feed to your family – the possibilities are endless!
I was inspired years ago by this Better Home and Garden version (which looks delicious) – but altered it to better fit my families taste!
You can also make this entire salad ahead, the one thing I would do is add the avocado right before you serve it so it stays fresh!

Ingredient for the Avocado, Feta, and Spinach Quinoa Salad
Salad Dressing
Instructions
- Rinse your quinoa under water well and add it to a small to medium sized pot with 1.5 cups of water and a sprinkle of salt. Let the water boil, turn the heat to low and cover for 15 minutes until the quinoa has absorbed all the liquid.
- While the quinoa is cooking, prepare the dressing – whisk together 1/4 cup of olive oil, 1/2 teaspoon of salt, and the juice of one lemon and set aside.
- Place the cooked quinoa in a large bowl, along with the red onion, tomatoes, spinach, and feta – combine well and pour the dressing on top.
- Right before serving, fold in the avocado and taste for salt!
